Goat Cheese truffles
- 10-12 oz dairy-free Goat cheese
- 1 1/2 C crushed pecans
- 2 t cinnamon
- 4 T honey plus extra for drizzle garnish
- 1 C dried crasins
- 1/2 C fresh minced parsley
Mix goat cheese, cinnamon, honey and half of the pecans together. Mix parsley, crasins and other half of pecans. Once goat cheese mixture is well blended spoon out balls, roll and coat in parsley/nut/crasins. Set aside and drizzle with honey. Chill until ready to serve.
