Peanut Butter Pumpkin Cookies
- 1 C of organic peanut butter or nut butter
- 3 T of pumpkin purée
- 1 t of pumpkin spice
- 2/3 C of Coconut Sugar
- 1 t vanilla extra
- dash of Himalayan salt
- 2/3 C organic dark chocolate chips
- 1/3 C organic dark brown sugar
- 2 t of coconut oil
Mix all ingredients (except chocolate chips) once well blended form cookie balls. Set on cookie sheet, press lightly with fork, sprinkle brown sugar over cookies. Bake at 350 8-10 minutes depending. While baking melt chocolate chips with coconut oil in a pot. Once done, drizzle chocolate or dip one side of your cookies into the chocolate sauce, let cool and enjoy! 🙂
