- 1 lb Salmon
- 3 avocados
- 3 lemons
- Handful of cilantro (minced)
- Romaine or butter lettuce
Seasoning for Salmon
- coconut oil or avocado oil
- 1 t Himalayan salt (the pink salt)- or sea salt
- 2-3 t organic brown sugar (enough to cover surface of Salmon)
- 1 t freshly grated ginger
- 1 T old bay blackened seasoning for shrimp/fish
- coconut amino (gluten-free alt to soy sauce)-cover surface of Salmon
- 1 t garlic powder
- 1/2 a lemon wedge-squeezed over top before going into the oven
Season your Salmon with the above ingredients in the order in which they are listed. Bake at 380 until fish flakes. If you have an internal thermometer, check in the thickest part of fish, salmon is fully cooked at 145 degrees. Once finished, slice avocados in half and remove a tiny bit of the inside. Stuff with chopped lettuce and salmon, squeeze lemon over top and garnish with minced cilantro. Deliciously satisfying. (We enjoyed diced granny smith apple slices lightly sprinkled with cinnamon on the side). Share a picture of your Salmon Stuffed Avocados 🙂
