- 1 lb fresh scallops
- 1 tbls cappers
- 1 tsp turmeric
- large spoon full of coconut oil
- sea salt & pepper to taste
- 1 tbsp vegan avocado oil butter
- basil
- parsley
Quick and easy to make. heat coconut oil in cast iron or stainless steel SKILLET. while heating, season both sides of scallops with salt, pepper, turmeric. sear both sides of scallops in oil (do not let them touch they will stick) cook 1 1/2 min. per side. Scallops should be a golden brown and transclucent in the center. toss cooked scallops in large glass bowl with cappers, basil, parsley, plant based avocado oil butter. toss and serve with fresh radishes and goat cheese.
